Keep in mind, the idea is to provide recipes that are easy to make during the day when you have time, and then warm up to eat at dinner time.

    Southwestern Veggie Soup

    · 2 Lbs Ground Beef, brown and drain

    · 3 beef bouillon cubes

    · 2 cups water

    · 1 cup celery, chopped

    · 1 can Kidney beans

    · 1 Pack frozen corn

    · 1 pack frozen mixed veggies

    · 4 oz can of diced chillies

    · 28 oz can diced tomatoes

    · 1 pack of taco seasoning

Combine all ingredients in large soup pot, bring to a boil

Then simmer on low for 30 minutes

Bullion cubes and taco seasoning? That's a lot of heart stopping salt power, phew!

It’s my great aunts recipe. I don’t think I’ve even ever made it this way. Swap out the cubes for beef stock and use my own seasoning. Heavy chilli powder and cumin.
