philly cheese steaks 2 large sweet (yellow or vidalia) onions extra virgin olive oil 2 tbs butter malt vinegar mayo kosher salt pepper 1lb london broil from the deli (should be rare and unseasoned) provolone or american cheese (preference) i switch them up each time i make it IMPORTANT: MUST USE FRESH BAKED SANDWICH ROLLS FROM BAKERY first step is carmelize onions https://www.youtube.com/watch?v=haLd8STXTqM in a large sauce pan (i use half the olive oil and add 2 tbs of butter instead) if you don't want to wait 45 minutes add a splash of cola to the onions and keep on medium heat watching and stirring frequently. this should reduce the time by 20 mins DO NOT BURN THE ONIONS!!!!! while onions are carmelizing take the lb of london broil and dice the meat on a cutting board so you have thin strips (3x1") cut a nice pocket into your deli rolls once onions are carmelized push them to one side of the pan (away from heat) turn heat to medium low and throw the meat in. stir around until you see some browning but don't torch the meat leave some pink in there separate the meat into two piles, move the onions on top of the meat and add 2 slices of cheese on top of the meat and onions open your bun and cover the piles face down. add a small splash of water to the pan and cover for 1-2 minutes (until roll is warm and semi steamed) take your spatula and gently flip your sandwich right side up onto the plate. mayo and malt vinegar are optional condiments. ready so to serve. recipe courtesy of chef dreadz x 84 and chef siiky johnson
